  • 1 egg
  • 1 egg yolk
  • 300ml milk
  • 2 tbsp. melted butter
  • Pinch of salt
  • Butter for frying

  • 480ml buttermilk
  • 1 egg
  • 60g unsalted butter, melted and cooled slightly
  • 1 tsp. vanilla extract

Instructions:

  1. Add the flour, baking powder, bicarbonate of soda, salt, and sugar to the bowl of the Thermomix and mix for 10 seconds on speed 6.
  2. Add the buttermilk, egg, melted butter, and vanilla extract to the bowl and mix for 10 seconds on speed 4.
  3. Scrape down the sides and bottom of the bowl and mix for another 5 seconds on speed 4.
  4. Let the batter sit for 10-15 minutes.
  5. Heat a non-stick pan over medium-high heat.
  6. Using a ladle, pour the batter onto the pan and cook until bubbles form on the surface of the pancake and the edges begin to look set, about 2-3 minutes.
  7. Flip the pancake and cook until the other side is lightly golden brown, about 1 minute.
  8. Serve warm with your favorite topping (we highly recommend maple syrup and crispy bacon).
