If you’re like me and you enjoy pancakes for breakfast, lunch or dinner, then you’re going to love this recipe I’ve discovered from Nigella Lawson. These Nutella crepe pancakes are the perfect treat for Pancake Day or any day!

Nigella Lawson’s Pancake Mix

Pancake Mix

Ingredients

  • 125g plain flour
  • 1 tbsp baking powder
  • pinch of salt
  • 1 tsp sugar
  • 1 large egg, beaten
  • 30g unsalted butter, melted and cooled
  • 225 ml milk
  • Nutella, to taste

Instructions

  1. In a large bowl, sift together the flour, baking powder, salt and sugar.
  2. In a separate bowl or jug, whisk together the egg, melted butter and milk.
  3. Pour the wet ingredients into the dry ingredients and whisk together until just combined.
  4. Heat a non-stick frying pan over a medium heat and pour in a ladleful of the batter, swirling it around the pan to coat the bottom evenly.
  5. Cook the pancake until bubbles rise to the surface and the underside is golden brown, then flip over and cook for a further minute or so on the other side.
  6. Repeat with the remaining batter until you have used it all up.
  7. To serve, spread a generous amount of Nutella over the pancake and roll it up. Enjoy!

  • 250g plain flour
  • pinch of salt
  • 1 tbsp sugar
  • 4 large eggs
  • 2 egg yolks
  • 600ml milk
  • 4-6 tbsp sunflower oil
  • Nutella, to taste

Instructions

  1. In a large bowl, whisk together the flour, salt and sugar.
  2. In a separate bowl, beat together the eggs, egg yolks and milk.
  3. Gradually pour the wet ingredients into the dry ingredients, whisking continuously, until the batter is smooth and lump-free.
  4. Heat a non-stick frying pan over a medium heat and brush lightly with sunflower oil.
  5. Pour in a ladleful of the batter and tilt the pan around to coat the bottom evenly.
  6. Cook the pancake for about 1-2 minutes on each side until browned, then transfer to a plate.
  7. Spread a generous amount of Nutella over the surface of the pancake, then fold in half and then half again to create a triangle shape.
  8. Repeat with the remaining batter until you have used it all up.
  9. To serve, dust the top of each pancake with icing sugar and enjoy!
