  • 2 cups chicken broth
  • 2 bay leaves
  • 1 cinnamon stick
  • 1 tsp cumin powder
  • 1 tsp coriander powder

In a large pot, heat the oil and fry the onions until golden brown. Add the garlic and lamb pieces and cook until browned. Add the spices, bay leaves, and cinnamon stick and fry for a few minutes. Add the tomatoes and broth and bring to a boil. Add the rice and stir well. Reduce heat and let cook for 30 minutes or until the rice is fully cooked. Serve hot.

  • 1 tsp red chilli powder
  • 1 tsp coriander powder

  • 1/2 lemon, juiced
  • Salt to taste
  • Oil for frying

Mix all the ingredients (except oil) in a bowl and marinate for 30 minutes. Heat oil in a deep frying pan and add the chicken pieces. Fry until crisp and golden brown. Serve hot with mint chutney.
