Chicken Shawarma
- 1 kg chicken breast, sliced into thin pieces
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp garlic powder
Mix all the ingredients in a bowl and marinate the chicken for 2 hours. Grill the chicken until fully cooked. Serve with pita bread, hummus, and veggies.
Lamb Kabsa
- 1 kg lamb, cut into pieces
- 3 cups basmati rice, washed and soaked for 30 minutes
- 4 tbsp vegetable oil
- 2 onions, chopped
- 3 cloves garlic, minced
- 2 tomatoes, chopped
- 2 cups chicken broth
- 2 bay leaves
- 1 cinnamon stick
- 1 tsp cumin powder
- 1 tsp coriander powder
- Salt and pepper to taste
In a large pot, heat the oil and fry the onions until golden brown. Add the garlic and lamb pieces and cook until browned. Add the spices, bay leaves, and cinnamon stick and fry for a few minutes. Add the tomatoes and broth and bring to a boil. Add the rice and stir well. Reduce heat and let cook for 30 minutes or until the rice is fully cooked. Serve hot.
Chicken Fry
- 500g boneless chicken, cubed
- 1 tsp turmeric powder
- 1 tsp black pepper powder
- 1 tsp red chilli powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tbsp ginger-garlic paste
- 1/2 lemon, juiced
- Salt to taste
- Oil for frying
Mix all the ingredients (except oil) in a bowl and marinate for 30 minutes. Heat oil in a deep frying pan and add the chicken pieces. Fry until crisp and golden brown. Serve hot with mint chutney.
