Check out these tasty Ramadan recipes

As we prepare to observe the holy month of Ramadan, it’s important that we keep our bodies nourished with meals that are wholesome and nutritious. Luckily, there are plenty of delicious options to choose from, and I’ve rounded up some of my favorites!

1. Chicken Shawarma

  • 1 pound boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions:

  1. Preheat oven to 425°F.
  2. In a small bowl mix together olive oil, paprika, cumin, garlic powder, salt, and pepper.
  3. Place chicken breasts in a large ziplock bag and pour marinade over chicken making sure it is completely coated. Allow to marinate for at least 30 minutes.
  4. Place chicken on a baking sheet lined with foil.
  5. Bake for 20-25 minutes or until chicken reaches an internal temperature of 165°F.

2. Lentil Soup

  • 1 pound lentils, rinsed and drained
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 cups chicken or vegetable broth
  • 2 cups chopped spinach

Instructions:

  1. In a large pot or Dutch oven, sauté onions and garlic in oil for 3-4 minutes until softened.
  2. Add in the rest of the ingredients except spinach and bring to a boil.
  3. Reduce heat and let simmer until lentils are soft and fully cooked, about 30 minutes.
  4. Stir in chopped spinach and cook until wilted, about 2 minutes.

3. Dates and Cream

  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups pitted dates

Instructions:

  1. In a large bowl, mix together cream, powdered sugar, and vanilla extract until whipped and fluffy.
  2. Serve with pitted dates for a sweet and creamy dessert.
