Welcome to my kitchen, my fellow foodies! Today, we’re going to talk about one of my favorite ingredients, oats. Yes, you heard that right. Oats are not just for your breakfast bowls or smoothies. I’ve got some exciting and lip-smacking oats recipes from India that will blow your mind (and taste buds).

First up, we have the humble Oats Pongal. Don’t let the name fool you; this South Indian dish is anything but bland. It’s easy to make and full of flavor. To start, heat some ghee in a pan and add cashews, cumin, and peppercorns. Once they start to splutter, add chopped ginger, green chilies, and curry leaves. Saute for a few seconds and stir in some mixed vegetables of your choice, like carrots, beans, and peas. Then, add the oats, turmeric powder, and salt. Pour in some hot water, cover the pan, and let it cook on low heat for 5-7 minutes. That’s it! Your oats pongal is ready to serve with some coconut chutney or sambar.

Next, we have Oats Upma, a healthy twist to the classic upma. This Kerala-style recipe uses sambar powder to give it a spicy and tangy taste. To make it, dry roast some oats in a pan till they turn slightly brown. In another pan, heat some oil and mustard seeds. Once they crackle, add urad dal, chana dal, and curry leaves. After a minute, add chopped onions and green chilies. Saute till the onions turn translucent, and then add chopped tomatoes. Once the tomatoes are soft, add sambar powder and salt. Stir for a few seconds and add the roasted oats. Pour in some hot water, cover the pan, and let it cook for 5-7 minutes. Garnish with coriander leaves and serve hot.

Last but not least, we have a fusion recipe that combines Indian flavors with oats – Oats Khichdi. It’s a one-pot meal that’s perfect for those lazy evenings. To make it, heat some ghee in a pressure cooker and add cumin seeds, bay leaves, and cinnamon stick. Once they start to release their aroma, add chopped onions, ginger-garlic paste, and green chilies. Saute till the onions turn golden brown and then add chopped tomatoes. Once the tomatoes are soft, add some mixed vegetables, like potatoes, carrots, and beans. Stir for a minute and add some turmeric powder, red chili powder, and salt. Then, add the oats, moong dal, and water. Close the lid of the pressure cooker and let it whistle for 2-3 times. Garnish with coriander leaves and serve hot with some yogurt or pickles.
