So, today I am sharing with you some of my favourite oatmeal recipes that are easy to make and definitely worth trying out!

Creamy Blueberry-Pecan Overnight Oatmeal Recipe

There is nothing quite like waking up to a scrumptious breakfast that is already waiting for you in the fridge. This overnight oatmeal recipe is creamy, dreamy and filled with the goodness of blueberries and pecans.

Ingredients:

  • 1 cup rolled oats
  • 1 cup almond milk
  • 1/4 cup chopped pecans
  • 1/4 cup fresh blueberries
  • 1 tablespoon honey
  • 1/2 teaspoon vanilla extract

Instructions:

  1. In a jar or bowl, combine rolled oats, almond milk, honey and vanilla extract. Mix well.
  2. Add in chopped pecans and blueberries. Cover and chill in the fridge overnight.
  3. In the morning, give it a good stir and top it off with some extra blueberries and pecans.
  4. Enjoy!

Coconut and Cinnamon Oat Cookies

  5. Form the dough into small balls and flatten slightly. Place on a baking tray lined with parchment paper.
  6. Bake for 10-12 minutes or until golden brown.
  7. Let the cookies cool before serving.
