Stuffed Mango Pancakes

Ingredients:

  • 1 and 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1 large egg
  • 1/2 cup milk
  • 1/2 cup yogurt (plain or vanilla)
  • 1/4 cup melted butter (unsalted)
  • 1/2 cup diced mango
  • 1/2 cup cream cheese
  • 1 tablespoon icing sugar

Instructions:

  1. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, salt and cinnamon.
  2. In a separate bowl, whisk together the egg, milk, yogurt and melted butter.
  3. Add the wet ingredients to the dry ingredients and mix until just combined.
  4. Gently stir in the diced mango.
  5. Heat up a non-stick pan or a griddle over medium heat. Scoop about 1/4 cup of batter (per pancake) on the pan for each pancake.
  6. Once the edges begin to set and small bubbles form on the surface of the pancakes, flip them over carefully and cook for another minute or so.
  7. In a separate bowl, stir together the cream cheese and icing sugar until smooth.
  8. Spread a generous layer of the cream cheese mixture onto a pancake, and then stack another pancake on top, pressing down gently.

Repeat with the remaining pancakes and cream cheese mixture until you have a tall stack of stuffed mango pancakes.
