  • 1 cup broken wheat
  • 1/2 cup yellow split peas
  • 1/2 cup moong dal
  • 1/4 cup chana dal

  • 1 tablespoon coriander seeds
  • 2 cinnamon sticks
  • 5 cloves
  • 5 green cardamom pods
  • 5 black peppercorns
  • 1 large onion, finely chopped
  • 2 tablespoons ginger-garlic paste
  • Salt to taste
  • 1 tablespoon red chili powder
  • 1 tablespoon turmeric powder
  • 1 tablespoon garam masala powder
  • Juice of 1 lemon
  • For garnish: fried onions, chopped cilantro, sliced green chilies, and lemon wedges

Instructions:

  1. Rinse the broken wheat, yellow split peas, moong dal, and chana dal in water and soak them overnight.
  2. Boil the mutton in plenty of water until tender.
  3. Heat the oil in a large pot or pressure cooker.
  4. Add the cumin seeds, coriander seeds, cinnamon sticks, cloves, cardamom pods, and peppercorns.
  5. Sautee for a minute or two, until fragrant.
  6. Add the chopped onion and ginger-garlic paste, and sautee for a few minutes.
  7. Add the soaked grains and stir well.
  8. Add the boiled mutton, including the stock, and stir well.
  9. Add salt, chili powder, and turmeric powder. Mix well.
  10. Cook on low heat for 3-4 hours, or pressure cook for 20-30 minutes.
  11. Use a blender or immersion blender to puree the mixture until it reaches a thick, smooth consistency.
  12. Stir in the garam masala powder and lemon juice.
  13. Serve hot, garnished with fried onions, cilantro, green chilies, and lemon wedges.
