  • ½ Cup Soy Sauce
  • ½ Cup Vinegar
  • 1 Head of Garlic (Peeled and Smashed)
  • 1 Tbsp Whole Peppercorn
  • 2 Bay Leaves
  • 1 Tsp Brown Sugar
  • 2 Tbsp Cooking Oil

  1. Start by preparing the chicken. Rinse and pat dry with paper towels. Cut into serving pieces if desired.
  2. In a pot, add the chicken, soy sauce, vinegar, garlic, peppercorn, and bay leaves. Mix well.
  3. Marinate the chicken for 30 minutes.
  4. After marinating, set the pot on medium heat and bring it to a boil. Cover and let it simmer for 30 minutes.
  5. Uncover and let the chicken cook for another 10 to 15 minutes or until the sauce has thickened.
  6. Add brown sugar and stir well. Cook for another 5 minutes.
  7. Heat cooking oil in a separate pan.
  8. Add the chicken pieces and fry for approximately 2 minutes until the skin is crispy.
  9. Remove from the pan and arrange on a plate.
