  • 1 kg chicken, cut into pieces
  • 1 cup white vinegar
  • 1 cup soy sauce
  • 1 head garlic, minced
  • 1 tsp black peppercorn
  • 3 bay leaves
  • 1 tbsp brown sugar

Instructions:

  1. In a pot or a Dutch oven, mix together the chicken, vinegar, soy sauce, garlic, black peppercorn, and bay leaves.
  2. Bring the mixture to a boil over medium-high heat, then cover and reduce the heat to low.
  3. Let the chicken simmer in the sauce for 30 minutes. Stir occasionally.
  4. After 30 minutes, add the brown sugar to the pot and stir to combine.
  5. Let the chicken simmer for another 10-15 minutes, or until the sauce has thickened and the chicken is cooked through.
  6. Remove the bay leaves before serving.

  • 1 kg chicken thighs, bone-in and skin-on

  • 1 cup soy sauce
  • 1 cup water
  • 1 head garlic, minced
  • 2 bay leaves

  • 1 tsp freshly ground black pepper
  • 4-5 Thai chili peppers, sliced (optional)
  • 2-3 stems green onions, sliced (optional)
