Chicken Adobo #1

- 1 onion, chopped
- 2 bay leaves
- 1 tbsp cooking oil

- In a bowl, mix white vinegar, soy sauce, chicken broth, brown sugar, garlic, onion, and bay leaves. Stir until sugar is dissolved.
- Add chicken to the bowl and marinate for at least 1 hour.
- Heat cooking oil in a pot over medium-high heat.
- Add chicken to the pot, skin side down, and fry until browned. Flip chicken and fry the other side until browned. Set chicken aside.
- Pour marinade into the pot and bring to a boil. Reduce heat to low and let simmer for 10 minutes.
- Add chicken to the pot and spoon marinade over the chicken.
- Cover pot and cook for 30-35 minutes on low heat, or until chicken is tender.
