I recently stumbled upon some amazing recipes that I just had to share with you! I have been on a bit of a cooking kick lately and finding delicious new dishes to try has been my latest obsession. Here are a couple of recipes that I have tried and absolutely loved.
First up is a pan pizza recipe that I discovered from Adam Ragusea. I have to say, this pizza is out-of-this-world good! The crust is perfectly crispy and the sauce is the perfect blend of tangy and sweet. Here are the ingredients you’ll need:
– 3 cups of all-purpose flour
– 2 teaspoons of salt
– 1 teaspoon of instant yeast
– 1 and 1/2 cups of warm water
– 2 tablespoons of olive oil
– 1/4 cup of tomato paste
– 8 ounces of shredded mozzarella cheese
– 1 teaspoon of dried oregano
To make the dough, you’ll first need to whisk together the flour, salt, and yeast in a large bowl. Next, add in the warm water and olive oil and use a wooden spoon to mix everything together until a shaggy dough forms. Cover the bowl with plastic wrap and let it sit at room temperature for at least 8 hours.
When you’re ready to make your pizza, preheat your oven to 500 degrees Fahrenheit and place a 12-inch cast-iron skillet in the oven to heat up. Roll out your dough on a floured surface and carefully transfer it to the hot skillet. Spread the tomato paste over the dough, leaving a small border around the edges. Sprinkle the shredded mozzarella cheese over the top, followed by the dried oregano.
Bake the pizza in the preheated oven for about 20 minutes, or until the crust is golden brown and the cheese is melted and bubbly. Take the skillet out of the oven and let the pizza cool for a few minutes before slicing and serving.
Next up is a pancake recipe that I found on GoodFood.com. This is a great recipe for weekend brunch or for a lazy Sunday morning breakfast in bed. Here’s what you’ll need:
– 1 cup of all-purpose flour
– 2 tablespoons of sugar
– 2 teaspoons of baking powder
– 1/4 teaspoon of salt
– 1 cup of milk
– 1 large egg
– 2 tablespoons of melted butter
– 1 teaspoon of vanilla extract
In a large mixing bowl, sift together the flour, sugar, baking powder, and salt. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and whisk everything together until just combined. Don’t overmix the batter or your pancakes will turn out tough.
Heat up a non-stick skillet or griddle over medium-high heat. Ladle in about 1/4 cup of batter for each pancake and cook until the bubbles on the surface start to pop and the edges start to look set. Flip the pancake over and cook for another 1-2 minutes on the other side, or until golden brown.
Serve your pancakes warm with a drizzle of maple syrup and some fresh berries on top. These pancakes are light, fluffy, and absolutely delicious!
