The first recipe we found comes from DiabetesTalk.net. This recipe uses Splenda instead of sugar to keep the carb count low, and adds just the right amount of cinnamon for the perfect fall flavor. Here’s how you can make it:
Diabetic Banana Bread with Splenda
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 cup unsalted butter, softened
- 1/2 cup Splenda
- 2 large eggs
- 1 cup mashed ripe banana (about 2 medium)
- 1/3 cup buttermilk
- 1 teaspoon vanilla extract
Instructions:
- Preheat oven to 350°F. Grease a 9-inch loaf pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- In a large bowl, cream together butter and Splenda. Beat in eggs, mashed banana, buttermilk, and vanilla extract.
- Mix in the dry ingredients until just combined.
- Pour batter into the prepared loaf pan and bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Our second recipe comes from Recipe Hot and is also diabetic-friendly. This recipe uses whole wheat flour instead of all-purpose flour for a healthier option, and includes flax seeds for added fiber. Here’s how you can make it:
Banana Bread Recipe for Diabetics

- 2 ripe bananas, mashed
- 1/2 cup unsweetened applesauce
- 1/4 cup honey
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 cup whole wheat flour
- 1/4 cup ground flax seeds
- 1/4 cup unsweetened vanilla almond milk
Instructions:
