Hey there, foodies! Today we’re bringing you some amazing recipes straight from the kitchen of Jamie Oliver himself. These recipes are quick, easy, and perfect for those busy weeknights when you want something delicious without spending hours in the kitchen.

Chicken Pie

Chicken Pie

Ingredients:

  • 1 kg Potatoes
  • 1 Lemon
  • 400 g Chicken breast, skinless
  • 1/2 a bunch of Fresh thyme
  • 1 Onion
  • 2 cloves of garlic
  • 200 g Baby spinach
  • 1 Knob of unsalted butter
  • 1 tbsp Plain flour
  • 1 tsp Mustard
  • 400 ml Whole milk
  • 50 g Parmesan cheese, grated
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 180°C/350°F/gas 4.
  2. Peel and chop the potatoes into 2cm chunks, then boil for 15 minutes.
  3. Grate the lemon zest and squeeze the juice over the chicken with a pinch of salt and pepper.
  4. Tear off the thyme leaves and sprinkle over the chicken, then fry in a pan until golden brown.
  5. Add your chopped onion and garlic, cook for a further 5 minutes, then add the spinach.
  6. Add the butter and flour, then stir in the mustard and slowly pour in the milk.
  7. Simmer and simmer until the sauce thickens, then add the lemon zest and Parmesan cheese.
  8. Mash up the potatoes, season with salt and pepper, then pile onto the chicken mixture.
  9. Bake for 20 minutes or until the top is golden brown.

Ingredients:

  • 6 Golden Delicious apples
  • 1 Lemon
  • 1 Cinnamon stick
  • 150 g Caster sugar
  • 2 tbsp Plain flour
  • 1 Egg
  • 1 Knob of unsalted butter
  • 500 g Puff pastry

Instructions:

  1. Preheat your oven to 190°C/375°F/gas 5.
  2. Peel and core the apples, then slice them into 1cm pieces.
  3. Grate the lemon zest and squeeze the juice over the apples with the cinnamon stick, sugar and flour.
  4. Put your butter in a pan and melt, then add the apple mixture and cook for 5 minutes.
  5. Dust a clean surface with flour and roll out the pastry until it’s around 3mm thick.
  6. Gently lay the pastry on top of the apple mixture, then cut slits in the top to allow the steam to escape.
  7. Brush the pastry with the beaten egg and bake in the oven for around 35 minutes, or until the pastry is golden brown.
  8. Allow to cool before serving.
