To start, preheat your oven to 425°F. Begin by making the crust. In a large mixing bowl, combine 2 cups of all-purpose flour, 1 teaspoon of salt, and 2/3 cup of shortening. Mix the ingredients together with a pastry blender or your hands until the dough resembles coarse crumbs. Gradually add 4-5 tablespoons of cold water, one tablespoon at a time, until the dough comes together.
Divide the dough in half and roll out one half on a floured surface until it’s roughly 12 inches in diameter. Carefully transfer the dough to a 9-inch pie dish. Trim the edges and set it aside.
Now, it’s time to make the filling. In a large mixing bowl, combine 3/4 cup of sugar, 3 tablespoons of all-purpose flour, 1 teaspoon of ground cinnamon, and 1/4 teaspoon of salt. Stir in 6 cups of thinly sliced, peeled apples until they are coated evenly.

Bake the pie at 425°F for 40-50 minutes or until the crust is golden brown and the apples are tender. Let the pie cool for at least 2 hours before serving.
