Whoa, hold up! You mean to tell me that there’s a way to make pudding without any dairy? That’s crazy talk, but also kind of awesome. Check out this recipe for almond milk pudding:

Dairy-Free Almond Milk Pudding

Almond milk pudding

Ingredients:

  • 3 cups of almond milk
  • 1/4 cup of cornstarch
  • 1/3 cup of sugar
  • 1 teaspoon of vanilla extract
  • A pinch of salt

Instructions:

  1. Mix together the cornstarch, sugar, salt, and a little bit of almond milk in a saucepan. (Don’t add all of the almond milk yet! We’re going to use it in a bit.)
  2. Cook the mixture over medium heat, whisking constantly, until it thickens up.
  3. Add the remaining almond milk and continue whisking until everything is combined and the pudding is smooth.
  4. Remove the saucepan from the heat and stir in the vanilla extract.
  5. Pour the pudding into bowls or jars and let them chill in the fridge for at least an hour.

Wow, that’s pretty darn easy. But if you’re anything like me, you might be thinking that plain vanilla pudding is kind of basic. What if we added some chocolate to the mix?
