I just had to share with you all the most amazing Filipino Chicken Adobo recipe ever. It’s so good, it will make you want to do a happy dance! Trust me, I know my way around a kitchen and this recipe is one that I’ll be making over and over again.
Ingredients:
- 1 1/2 lbs bone-in, skin-on chicken thighs
- 1/2 cup soy sauce
- 1/2 cup white vinegar
- 1/4 cup honey
- 4 cloves garlic, minced
- 1 bay leaf
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions:
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned, turning once, about 5-6 minutes per side.
- In a small bowl, whisk together soy sauce, white vinegar, honey, garlic, bay leaf, and black pepper.
- Pour sauce over chicken in skillet.
- Bring to a simmer, then reduce heat to medium-low and cover.
- Cook for 25-30 minutes or until chicken is cooked through and tender.
- Serve hot over rice, garnished with green onions and toasted sesame seeds if desired.
This recipe has a great balance of sour, salty, and sweet flavors. The chicken is so tender and juicy, it practically falls off the bone. It’s perfect for a family dinner, or even for meal prep. Just be sure to make enough, because you’ll definitely want leftovers!

- 1/4 cup brown sugar
- 1 head garlic, minced
- 1 onion, chopped
- 1 tsp peppercorns
- 2 bay leaves
Instructions:
- In a large skillet, combine chicken, soy sauce, white vinegar, chicken broth, brown sugar, garlic, onion, peppercorns, and bay leaves.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until chicken is tender and sauce has thickened.
- Remove bay leaves and serve hot over rice.
