Ingredients:
– 2 cups kale, stemmed and chopped
– 1/2 cup basil leaves, packed
– 1/2 cup almonds, toasted
– 1/4 cup grated Parmesan cheese
– 1 clove garlic, minced
– 1/4 teaspoon salt
– 1/4 cup olive oil
– 1 tablespoon water
Instructions:
1. In a food processor, combine the kale, basil, almonds, Parmesan cheese, garlic, and salt. Pulse until everything is finely chopped.
2. With the food processor running, slowly add in the olive oil, and then the water. Continue to process until the pesto is smooth, scraping down the sides of the bowl as needed.
3. Taste and adjust seasoning as necessary.
4. Serve the pesto over your favorite pasta, as a spread for sandwiches or crackers, or as a dip for veggies.
This recipe makes about 1 cup of pesto, and can be stored in an airtight container in the refrigerator for up to a week.
