For the crust:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup unsalted butter, cold and cubed
  • 1/4 to 1/2 cup ice water

For the filling:

  • 8 cups thinly sliced peeled tart apples (about 8 medium)
  • 1 tablespoon lemon juice
  • 3/4 cup sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 tablespoon unsalted butter

  1. In a large bowl, whisk together flour, salt and sugar. Cut in butter until mixture resembles coarse crumbs. Add ice water, a tablespoon at a time, until the dough comes together in a ball.
  2. Divide dough in half and shape each into a disk. Wrap in plastic and refrigerate at least 1 hour.

For the filling:

  1. Preheat oven to 375°F.
  2. Toss apples with lemon juice. In a separate bowl, whisk sugar, flour, cinnamon, ginger, nutmeg and salt together. Sprinkle over apples and toss to coat.
  3. Roll one ball of dough to fit 9-inch pie plate. Add apple mixture and dot with butter. Roll out the second ball of dough and place over top of the filling. Seal edges and cut slits to vent.
  4. Bake for 45-50 minutes or until crust is golden and apples are tender.
