Salmon Filo Pie

This savory pie is perfect for those who crave something rich in taste and texture. Here are the ingredients that you need:

  • 4 salmon fillets
  • 1 large onion
  • 1 tablespoon of olive oil
  • 2 garlic cloves
  • 200g of spinach
  • 2 tablespoons of creme fraiche
  • 1 tablespoon of dill
  • 1 packet of filo pastry

Instructions:

  1. Preheat the oven to 180C/350F/Gas 4
  2. Put the salmon fillets in a frying pan and cook over medium heat until they turn brown on both sides
  3. In another frying pan, cook the onion in olive oil until it becomes brown
  4. Add the garlic and spinach to the frying pan with the onion and cook until the spinach is wilted
  5. Add the creme fraiche and dill to the frying pan with the onion and spinach and cook until it becomes thick
  6. Place the salmon in a baking dish, pour over the onion and spinach filling
  7. Cut the filo pastry into squares and place on top of the salmon
  8. Brush the pastry with melted butter and sprinkle dill on top
  9. Bake in the oven for 15 minutes or until the pastry becomes golden brown

Apple and Wensleydale Pie

If you’re in the mood for something sweet, then this Apple and Wensleydale pie is the perfect choice. Here are the ingredients you need:

  • 3 Granny Smith Apples
  • 75g caster sugar
  • 1 tsp cinnamon
  • zest of 1 lemon
  • 75g Wensleydale cheese
  • 1 egg yolk
  • 500g sweet shortcrust pastry
  • flour for dusting

Instructions:

  1. Preheat the oven to 180C/350F/Gas 4
  2. Peel and slice the apples and place them in a bowl with the caster sugar, cinnamon and lemon zest. Mix well.
  3. Roll out the pastry on a lightly floured surface until it is roughly 0.5cm thick
  4. Place the pastry into a greased 20cm pie dish, prick with a fork, and chill in the fridge for about 20 minutes
  5. Crumbly the Wensleydale cheese into small pieces and mix with the apple mixture. Pour the mixture into the chilled pastry case.
  6. Brush the edge of the pie with the beaten egg yolk and cover with a pastry lid. Trim the edges and brush the top with the remaining egg yolk.
  7. Make a small hole in the center of the pie, and bake in the oven for 35-40 minutes.
  8. Remove the pie from the oven and allow it to cool for 5 minutes before serving.
