Quick and Easy Pancakes for One

Ingredients:

  • 1/2 cup all-purpose flour
  • 1 tablespoon sugar
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1 pinch of salt
  • 1/2 cup buttermilk (or 1/2 cup milk + 1/2 teaspoon vinegar/lemon juice)
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon melted butter (or vegetable oil)

Instructions:

  1. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate small bowl, whisk together the buttermilk, vanilla extract, and butter (or oil).
  3. Pour the wet ingredients into the dry ingredients and whisk until just combined.
  4. Heat a nonstick skillet or griddle over medium heat. Once hot, pour the batter onto the skillet/griddle in 1/4 cup portions.
