Martha Stewart’s Best Buttermilk Pancakes
Ingredients:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 tablespoons sugar
- 2 large eggs, lightly beaten
- 3 cups buttermilk
- 4 tablespoons unsalted butter, melted
- 1/2 teaspoon vanilla extract
Instructions:
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
- In another bowl, beat together the eggs, buttermilk, melted butter, and vanilla.
- Mix the dry and wet ingredients together until just blended. Do not overmix, as this will result in tough pancakes.
- Heat a non-stick pan or griddle over medium heat. Using a 1/4-cup measure, pour the batter onto the griddle for each pancake.
- Cook the pancakes until you see bubbles forming on the surface, about 3-4 minutes. Flip the pancake and cook until it is golden brown on both sides.
- Serve hot with your favorite toppings! Maple syrup is always a classic choice, but you can also try fresh fruit, whipped cream, or chocolate chips.
