To start, let’s mix the dry ingredients together. In a bowl, whisk together 1 cup of flour, 2 tablespoons of sugar, 1 teaspoon of baking powder, and 1/4 teaspoon of salt. In a separate bowl, mix together 1 egg yolk, 3/4 cup of strong brewed coffee, and 1 tablespoon of melted butter. Pour the wet mixture into the dry ingredients and stir until just combined.
In a separate bowl, beat the egg white until stiff peaks form. Gently fold the egg white into the batter. Heat a non-stick pan over medium heat and pour about 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip the pancake and cook until golden brown.
For the topping, we’ll make a simple coffee syrup. In a small saucepan, combine 1/2 cup of strong brewed coffee, 1/4 cup of sugar, and 1/4 cup of water. Bring to a boil, then reduce the heat and simmer for 10-15 minutes or until the syrup has thickened.
To assemble the pancakes, stack them up on a plate with a drizzle of the coffee syrup in between each layer. Finally, top with a dollop of whipped cream and a sprinkle of cocoa powder.
