Oh, my goodness! Have y’all ever tried Apple Cranberry Pie? It’s absolutely divine! I found this recipe from Ocean Spray® Cranberry Classroom and had to try it out. Trust me, once you taste this pie, you’ll be hooked.
Apple Cranberry Pie Recipe
First, here’s a picture of the finished product:
Now, for the ingredients:
- 2 cups Ocean Spray® Fresh or Frozen Cranberries
- 2 cups peeled, thinly sliced firm apples (about 2 medium)
- 3/4 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 tablespoon margarine or butter
- Pastry for 9-inch double crust pie
And here are the instructions:
- Preheat oven to 425ºF.
- Combine cranberries and apples in large bowl.
- Mix sugar, flour, cinnamon and salt in small bowl; sprinkle over fruit.
- Toss lightly.
- Turn mixture into pastry-lined 9-inch pie plate; dot with margarine.
- Cover with top crust.
- Seal and flute edge.
- Cut slits in several places near center.
- Bake for 35 to 45 minutes, or until crust is golden brown and filling is bubbly.
Now, if you’re like me, one pie is never enough. That’s why I also found a scrumptious recipe for an Apple and Cranberry Main Dish from Ocean Spray®. Here’s a picture of what that will look like:
Apple and Cranberry Main Dish Recipe
And here are the ingredients for that dish:
- 1/2 cup Ocean Spray® Fresh or Frozen Cranberries
- 1 medium apple, chopped
- 1/4 cup chopped onion
- 2 tablespoons butter, divided
- 1/2 cup water
- 1/4 cup orange marmalade
- 1/4 cup packed brown sugar
- 1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary leaves, crushed
- 1/4 teaspoon each salt and pepper
- 4 bone-in pork loin chops, 3/4 to 1 inch thick (about 2 pounds total)
And here are the instructions:
- Preheat oven to 375°F.
- In medium bowl, combine cranberries, apple and onion; set aside.
- In medium saucepan melt 1 tablespoon of the butter.
- Add water, orange marmalade, brown sugar, rosemary, salt and pepper; stir to combine.
- Cook and stir until marmalade is melted; remove from heat.
- Stir cranberry mixture into sauce.
- Heat 1 tablespoon butter over medium-high heat in large oven-proof skillet.
- Add pork chops; cook about 2 minutes or until browned on one side.
- Turn chops over.
- Top each chop with about 1/3 cup cranberry mixture.
- Cook over medium-high heat until sauce comes to a simmer.
- Transfer skillet to oven.
- Bake 10 to 15 minutes or until chops are done.
