Instructions:
- Heat a pan on low flame and add oats. Dry roast the oats for 5-7 minutes until they turn golden brown. Keep stirring to prevent burning. Once done, remove the oats from the pan and keep aside.
- Heat oil in the same pan and add cumin seeds, mustard seeds, curry leaves and garlic. Saute for a few seconds until fragrant.
- Add onions, green chili, and ginger. Saute for 2-3 minutes until the onions turn translucent.
- Add mixed vegetables and saute for 2-3 minutes until they are cooked.
- Now, add tomatoes and saute for 2-3 minutes until they become soft.
- Add turmeric powder, red chili powder, coriander powder and salt. Mix well.
- Add 2 cups of water to the pan and bring it to a boil.
- Once the water comes to a boil, add the roasted oats and mix well.
- Cover the pan with a lid and cook on low flame for 10-12 minutes until the oats are cooked well.
