  • 2-3 curry leaves
  • 1 clove garlic, minced
  • 1/4 tsp turmeric powder
  • 1/4 tsp red chili powder
  • 1/4 tsp coriander powder
  • Salt to taste
  • 1 tbsp oil
  • 2 cups water
  • 2 tbsp coriander leaves, chopped
  • 1 tsp lemon juice

Instructions:

  1. Heat a pan on low flame and add oats. Dry roast the oats for 5-7 minutes until they turn golden brown. Keep stirring to prevent burning. Once done, remove the oats from the pan and keep aside.
  2. Heat oil in the same pan and add cumin seeds, mustard seeds, curry leaves and garlic. Saute for a few seconds until fragrant.
  3. Add onions, green chili, and ginger. Saute for 2-3 minutes until the onions turn translucent.
  4. Add mixed vegetables and saute for 2-3 minutes until they are cooked.
  5. Now, add tomatoes and saute for 2-3 minutes until they become soft.
  6. Add turmeric powder, red chili powder, coriander powder and salt. Mix well.
  7. Add 2 cups of water to the pan and bring it to a boil.
  8. Once the water comes to a boil, add the roasted oats and mix well.
  9. Cover the pan with a lid and cook on low flame for 10-12 minutes until the oats are cooked well.
  10. Open the lid, add lemon juice, coriander leaves and mix well. Turn off the flame.
