- Coriander leaves for garnish

- Heat oil in a pan and add cumin seeds. Let them splutter.
- Add chopped onions and green chilli and fry until the onions turn translucent.
- Add ginger garlic paste and fry until the raw smell disappears.
- Add the mixed vegetables and saute for a minute or two.
- Add the oats and mix well.
- Pour in water or vegetable broth and season with salt and pepper.
- Cover the pan with a lid and let it cook for 5-7 minutes or until the oats are soft and the vegetables are cooked.
- Add lemon juice (optional) and mix well.
- Garnish with coriander leaves and serve hot.
