I just baked the best banana bread ever! It’s so simple to make and incredibly delicious. I used a small loaf pan and the result was perfect. The texture is moist and the combination of bananas, cinnamon and brown sugar is just heavenly.
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs, beaten
- 3 ripe bananas, mashed
- 1/4 cup buttermilk
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts (optional)
Instructions:
- Preheat the oven to 350°F (175°C) and grease a small loaf pan.
- In a medium bowl, combine the flour, baking soda, and salt.
- In a large bowl, whisk together the sugar, oil, and eggs. Stir in the mashed bananas, buttermilk, and vanilla extract.
- Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
- If using walnuts, fold them into the batter.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool the banana bread in the pan for 10 minutes before removing it to a wire rack to cool completely.
- Slice and enjoy!
