Good morning folks! Today, I am excited to share with you a delicious and healthy breakfast recipe that has been a lifesaver for me on busy weekday mornings – Overnight Oats!

Overnight Oats are a simple and easy-to-make breakfast dish that can be customized to suit your taste buds. All you have to do is mix together a few ingredients before you go to bed and let it sit in the fridge overnight. The next morning, you wake up to a refreshing and filling breakfast that can be enjoyed warm or cold.

Today, I will be sharing two of my favourite Overnight Oats recipes – Maple Pecan and Blueberry. Let’s start with the Maple Pecan recipe first.

Maple Pecan Overnight Oats

Maple Pecan Overnight Oats

Ingredients:

  • 1 cup rolled oats (use gluten-free oats if needed)
  • 1 cup unsweetened almond milk
  • 1 tablespoon chia seeds
  • 1 tablespoon maple syrup
  • 1/4 cup chopped pecans

Instructions:

  1. In a medium-sized mixing bowl, mix together the rolled oats, unsweetened almond milk, chia seeds, and maple syrup.
  2. Stir in the chopped pecans.
  3. Transfer the mixture to a mason jar or an airtight container and refrigerate overnight.
  4. In the morning, give the mixture a stir and enjoy as is or add your favourite toppings. I like to add a few fresh berries on top for some added sweetness.

Blueberry Overnight Oats

Blueberry Overnight Oats

Ingredients:

  • 1 cup rolled oats (use gluten-free oats if needed)
  • 1 cup unsweetened almond milk
  • 1/4 cup fresh or frozen blueberries
  • 1 tablespoon chia seeds
  • 1 tablespoon honey

Instructions:

  1. In a medium-sized mixing bowl, mix together the rolled oats, unsweetened almond milk, blueberries, chia seeds, and honey.
  2. Transfer the mixture to a mason jar or an airtight container and refrigerate overnight.
  3. In the morning, give the mixture a stir and enjoy as is or add your favourite toppings. I like to add a sprinkle of cinnamon and a few chopped nuts on top for some added flavour and crunch.
