Filipino Chicken Adobo
Ingredients:
- 2 pounds chicken thighs and drumsticks
- 1/2 cup white vinegar
- 1/2 cup soy sauce
- 1/2 cup chopped onion
- 1/4 cup sugar
- 6 cloves garlic, minced
- 2 bay leaves
- 1/2 teaspoon black pepper
- 1/4 cup water
- 2 tablespoons vegetable oil
Instructions:
- Combine chicken, vinegar, soy sauce, onion, sugar, garlic, bay leaves, and black pepper in a large pot. Let marinate for at least 30 minutes or overnight in the refrigerator.
- Bring the chicken to a boil over high heat, then reduce to a simmer and cover. Cook for 30 minutes.
- Remove chicken from the pot and set aside. Bring the sauce to a boil over high heat and cook for 10-15 minutes or until thickened. Add water as needed to achieve desired consistency.

- 1/4 cup chopped cilantro
- 1/4 cup soy sauce
- 1/4 cup chicken broth
- 1 tablespoon cornstarch
- 1 tablespoon oyster sauce
- Egg roll wrappers
- Oil for frying
Instructions:
- Heat a large skillet over medium-high heat. Add pork and cook, breaking up with a spoon, until browned and cooked through.
- Add onion and garlic to the skillet and cook until softened, about 3 minutes.
- Add carrots, celery, green onions, cilantro, soy sauce, and chicken broth to the skillet. Cook for 5-7 minutes or until vegetables are tender.
- In a small bowl, whisk together cornstarch and oyster sauce. Add to the skillet and stir until sauce thickens, about 1 minute.
- Wrap 1-2 tablespoons of the pork mixture in each egg roll wrapper, tucking in the sides to form a tight roll.
