Chicken Adobo Recipe
Ingredients:
- 1 pound skinless chicken thighs
- 1/2 cup soy sauce
- 1/2 cup vinegar
- 1/2 cup water
- 1/4 cup brown sugar
- 4 cloves garlic, minced
- 1 bay leaf
- 1 teaspoon black peppercorns
- Cooked rice, for serving
Instructions:
- Combine the chicken thighs, soy sauce, vinegar, water, brown sugar, garlic, bay leaf, and black peppercorns in a large saucepan or Dutch oven.
- Bring the mixture to a boil over medium-high heat.
- Reduce the heat and simmer for 20 minutes.
- Remove the chicken from the sauce and set aside.
- Bring the sauce to a boil and cook for another 5 minutes or until it thickens slightly.
- Serve the chicken with the sauce and cooked rice.

CHICKEN ADOBO
Ingredients:
- 1 1/2 lb. chicken thighs and legs
- 1/2 cup soy sauce
- 1/2 cup white vinegar
- 1/2 cup brown sugar
- 1/4 cup chopped garlic
- 1 bay leaf
- 1/2 tsp black pepper
- 2 tbsp vegetable oil
Instructions:
- Heat up a skillet and add in the vegetable oil, then brown the chicken on both sides until the skin is crispy and golden brown. Set aside.
- Add more oil if needed, then sauté the garlic until fragrant and browned but not burnt.
- Add the brown sugar, stir and cook until caramelized.
- Add the soy sauce, vinegar, bay leaf, and black pepper. Bring to a simmer, then let chicken cook until it absorbs the flavors and the sauce thickens, about 25-30 minutes on medium-low heat. Serve hot.
