Instant Pot Chicken Adobo Recipe
Ingredients
- 1/2 cup soy sauce
- 1/2 cup apple cider vinegar
- 1/2 cup water
- 1 tablespoon minced garlic
- 1 tablespoon brown sugar
- 2 bay leaves
- 1/2 teaspoon black pepper
- 1 1/2 pounds bone-in, skin-on chicken thighs
- 2 green onions, sliced
- 2 tablespoons chopped fresh cilantro leaves
Instructions
- In a small bowl, whisk together soy sauce, apple cider vinegar, water, garlic, brown sugar, bay leaves, and black pepper.
- Place chicken thighs in the Instant Pot and pour the sauce over the chicken. Make sure the chicken is well-coated in the sauce.
- Close the Instant Pot lid and make sure the valve is set to “sealing.”
- Set the Instant Pot to cook on high pressure for 15 minutes.
- When the cooking time is up, use the quick release method to release the pressure.
- Remove the chicken from the Instant Pot and place it on a serving platter.
- Press the “saute” button on the Instant Pot and let the sauce simmer for about 5 minutes.
- Spoon the sauce over the chicken and garnish with sliced green onions and chopped cilantro.

- In a bowl, whisk together soy sauce, vinegar, brown sugar, garlic, peppercorns, and bay leaves until brown sugar is dissolved.
- Place chicken thighs in the Instant Pot and pour the sauce over the chicken.
- Cook on high pressure for 15 minutes.
- When the cooking time is up, use the quick release method to release the pressure.
- Remove the chicken from the Instant Pot and set it aside.
- In a small bowl, whisk together cornstarch and water.
- Press the “saute” button on the Instant Pot and add the cornstarch mixture to the sauce. Stir until the sauce thickens.
- Serve the chicken with the thickened sauce and steamed rice.
