Oh boy, do I have a treat for you! I recently stumbled upon a couple of mouth-watering chicken adobo recipes that I just had to share with you. If you’re not familiar with this Filipino dish, it’s basically chicken braised in a sauce made from soy sauce, vinegar, garlic, and other spices. Trust me, it’s an explosion of flavors that you wouldn’t want to miss out on!

The First Recipe

Ingredients:

  • 3-4 lbs chicken thighs and drumsticks, skin on
  • 1 cup soy sauce
  • 1 cup white vinegar
  • 1 cup chicken broth
  • 1 head garlic, minced
  • 1 onion, diced
  • 2 bay leaves
  • 1 tsp black peppercorn
  • 1 tbsp brown sugar
  • salt, to taste
  • green onions, sliced, for garnish

Instructions:

  1. Heat a large pot over medium-high heat. Once hot, add the chicken and cook until browned on all sides, for around 8-10 minutes. Remove the chicken from the pot and set aside.
  2. In the same pot, sauté the garlic and onions until translucent. Add the bay leaves, black peppercorn, soy sauce, white vinegar, chicken broth, and brown sugar. Stir well.
  3. Bring the mixture to a simmer, then add the chicken back in. Cover the pot and cook over low heat for around 45 minutes, or until the chicken is tender.
  4. Remove the bay leaves, then let the chicken cool for a few minutes before serving. Garnish with green onions.

  4. Remove the chicken from the pot and set it aside. Increase the heat to high and let the sauce boil for a few more minutes to thicken it.
  5. Return the chicken to the pot and stir to coat it in the sauce. Garnish with green onions.
