Ingredients:
- 2 cups leftover risotto
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
Instructions:
- Heat a non-stick skillet over medium-high heat.
- Add olive oil to skillet and swirl to coat.
- Form leftover risotto into a round patty and dust both sides with flour.
- Place patty onto skillet and cook until browned and crispy, about 5-7 minutes per side.
- Flip and cook until other side is crispy as well.
- Serve immediately as a side dish or light entrée.
