– 2 1/3 cups mashed overripe bananas
1. Preheat your oven to 350 degrees F (175 degrees C), and grease a 9×5 inch loaf pan.
2. In a medium bowl, mix together the flour, baking soda, and salt.
3. In a large bowl, cream together the butter and brown sugar until light and fluffy. Stir in the eggs and mashed bananas until well blended. Stir in the flour mixture until just blended.
4. Pour the batter into the prepared loaf pan, and bake for 60-65 minutes, or until a toothpick inserted into the center of the bread comes out clean.
