Today I wanted to share one of my favorite pancake recipes with you – chocolate chip pancakes! Trust me, once you try these, you won’t want any other kind of pancakes. They’re fluffy, they’re sweet, and they’re packed with chocolatey goodness.

First, preheat your griddle or frying pan to 375°F. This will ensure your pancakes cook evenly and don’t stick to the surface.
Next, in a mixing bowl, whisk together 1 1/2 cups of all-purpose flour, 2 tablespoons of sugar, 2 teaspoons of baking powder, and 1/2 teaspoon of salt.
In a separate bowl, whisk together 1 1/4 cups of milk, 1 egg, and 3 tablespoons of melted butter. Add the wet ingredients to the dry ingredients and stir until everything is combined. Don’t overmix, or your pancakes will become tough.

Next, fold in 1/2 cup of chocolate chips. You can use milk chocolate or dark chocolate – it’s your preference!
Using a 1/4 cup measuring cup, spoon the batter onto the griddle. Cook for 2-3 minutes on each side, or until lightly browned. Repeat with the remaining batter.

As you cook the pancakes, keep them warm in a 200°F oven. This will ensure they stay fluffy and don’t get cold while you finish cooking the rest of the batter.

Now for the best part – serving your chocolate chip pancakes! Stack your pancakes and top with a dollop of whipped cream and some more chocolate chips.
