  • 1 tablespoon Plus 1 teaspoon honey, divided
  • 2 tablespoons Avocado oil
  • 1 Large onion, thinly sliced
  • 1 teaspoon Sea salt
  • 1 teaspoon Freshly grated ginger
  • 2 Whole bay leaves

Instructions:

  1. Season the chicken with black pepper and 1 teaspoon of honey, then set it aside.
  2. In a bowl, mix the vinegar, coconut aminos, garlic, and the remaining honey.
  3. Heat the avocado oil in a Dutch oven or a large pot over medium-high heat. Add the onions and cook until soft and translucent, about 5 minutes.
  4. Add the chicken, salt, ginger, and bay leaves to the pot. Pour the vinegar mixture over the chicken and onions.
  5. Bring everything to a boil, then reduce the heat to medium and let it simmer for 25-30 minutes. The chicken should be cooked through and tender.
