Y’all, I made the most bomb chicken adobo the other day and just had to share the recipe with you. This is some authentic Filipino flavor that’ll have you licking your plate clean. Check it out:

Instant Pot Chicken Adobo

Ingredients:

  • 4-6 chicken thighs, bone-in
  • 1/2 cup soy sauce
  • 1/2 cup vinegar
  • 1/2 cup water
  • 4 cloves garlic, minced
  • 1 tsp black peppercorns
  • 3 bay leaves
  • Brown sugar, to taste (optional)

Instructions:

  1. Season the chicken thighs with salt and pepper.
  2. In your Instant Pot, combine the soy sauce, vinegar, water, garlic, peppercorns, and bay leaves.
  3. Place the chicken thighs in the Instant Pot, making sure they’re fully submerged in the sauce.
  4. Cook on Manual, high pressure for 12 minutes, then quick-release the pressure.
  5. If desired, add brown sugar to taste to balance out the saltiness.
  6. Serve over rice and enjoy!

Ingredients:

  3. Remove the chicken and set it aside. Drain the excess oil from the pot.
  4. Add the soy sauce, vinegar, water, garlic, peppercorns, and bay leaves to the pot. Bring to a boil over high heat, then reduce to low and add the chicken back in.
  5. Simmer, covered, for 30-45 minutes, or until the chicken is cooked through and tender.
  6. If desired, add brown sugar to taste to balance out the saltiness.
  7. Serve over rice and enjoy!
