Ingredients:

  • 1 double crust pastry recipe
  • 6 cups thinly sliced, peeled apples
  • 3/4 cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter

Instructions:

  1. Preheat oven to 375°F.
  2. Roll pastry into two 1/8-in.-thick rounds on a lightly floured surface.
  3. Place one pastry round into a 9-in. pie plate; trim even with rim.
  4. In a large bowl, combine apples, sugar, lemon juice, cinnamon, nutmeg and salt. Toss to coat.
  5. Transfer to pastry-lined pie plate. Dot with butter. Trim remaining pastry to 1/2 in. beyond edge of plate; place over filling. Trim, seal and flute edge. Cut slits in top.
  6. Bake on bottom rack 45-50 minutes or until crust is golden brown and filling is bubbly.

Instructions:

  1. Preheat oven to 375°F.
  2. Roll pastry into two 1/8-in.-thick rounds on a lightly floured surface.
