Ingredients:
– 1 cup rolled oats
– 1/2 cup toor dal
– 1/2 cup mixed vegetables (carrots, beans, peas and potatoes)
– 1 onion, chopped
– 1 tomato, chopped
– 1 green chilli, chopped
– 1/2 tsp turmeric powder
– 1 tsp cumin seeds
– A pinch of hing (asafoetida)
– Salt to taste
Instructions:
1. Wash and soak the toor dal for 30 minutes. Drain the water and keep it aside.
2. Heat oil in a pressure cooker and add cumin seeds and hing. Let it crackle.
3. Add chopped onion, green chilli and sauté until the onions turn translucent.
4. Add chopped tomato and cook until it turns mushy.
5. Add the mixed vegetables of your choice and cook for 2-3 minutes.
6. Add soaked toor dal, turmeric powder and salt. Mix it well.
7. Add water and bring it to a boil.
8. Add rolled oats and mix it well.
9. Close the lid and pressure cook until you hear 3 whistles.
10. Let it cool naturally for a few minutes.
11. Serve hot with raita or pickle on the side.
