These cookies are the bomb, guys! They’re crispy and crunchy on the outside, but soft and chewy on the inside. And the best part? They’re made with oatmeal, so they’re healthy too!

CRISPY OATMEAL COOKIES

Ingredients:

  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups old-fashioned rolled oats

Instructions:

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, using an electric mixer, cream together the butter, granulated sugar, and brown sugar until creamy and smooth.
  4. Beat in the egg and vanilla until well combined.
  5. Gradually add in the flour mixture until just combined.
  6. Stir in the oats until evenly dispersed.
  7. Using a cookie scoop or spoon, drop rounded balls of dough onto the prepared baking sheets, spacing them 2 inches apart.
  8. Bake for 12-15 minutes or until golden brown and crispy on the outside.
  9. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
