Chewy Oatmeal Cookies

Ingredients:

  • 1 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 and 1/2 cups old fashioned oats

Directions:

  1. Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until it’s light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually stir the dry ingredients into the wet ingredients, mixing until just combined.
  6. Mix in the oats until just combined.
  7. Using a cookie scoop, drop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake the cookies for 12-14 minutes or until the edges are lightly golden brown.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
