Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup low-sodium milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1/2 cup fresh blueberries

Instructions

  3. Add the wet ingredients to the dry ingredients and stir until just combined.
  4. Fold in the blueberries.
  5. Heat a nonstick pan over medium heat.
  6. Spray with cooking spray.
  7. Drop 1/4 cup of batter into the pan for each pancake.
  8. Cook until bubbles form on the surface and the edges are dry, then flip and cook until golden.
