What’s good, y’all? Today, I’m bringing the heat with some Chicken and Pork Belly Adobo straight from Leah Cohen’s kitchen. If you haven’t had the chance to try this classic Filipino dish, you’re missing out on some serious flavor bombs that are about to explode in your mouth.

First up, Leah’s Chicken Adobo:

Chicken Adobo

Ingredients:

  • 2 lbs chicken thighs, bone-in and skin-on
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • 1/4 cup brown sugar
  • 1 head of garlic, crushed
  • 1 onion, sliced
  • 4 bay leaves
  • 1 tablespoon whole black peppercorns

Instructions:

  1. Season the chicken with salt and pepper.
  2. Heat up a large pot over medium heat and add the chicken skin-down, cooking until the skin is golden brown, about 5 minutes. Flip the chicken and cook for another 3 minutes.
  3. Add the soy sauce, vinegar, brown sugar, garlic, onion, bay leaves and black peppercorns to the pot with the chicken.
  4. Cover and let simmer over low heat for 1 hour, stirring occasionally.
  5. Remove the cover and increase the heat to medium-high, allowing the sauce to reduce and thicken for about 15-20 minutes.
  6. Serve hot with a side of rice and vegetables.

Now let’s get into that Braised Pork Belly Adobo:

Pork Belly Adobo

Ingredients:

  • 2 lbs pork belly, cut into bite-sized pieces
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • 1/4 cup brown sugar
  • 1 head of garlic, crushed
  • 1 onion, sliced
  • 4 bay leaves
  • 1 tablespoon whole black peppercorns

Instructions:

  1. In a large pot, sear the pork belly over medium-high heat until golden and crispy. Remove from the pot and set aside.
  2. Add the soy sauce, vinegar, brown sugar, garlic, onion, bay leaves and black peppercorns to the pot and bring to a simmer.
  3. Return the pork to the pot and cover with the sauce.
  4. Cover and let simmer over low heat for 2-3 hours, stirring occasionally.
  5. Uncover the pot and let the sauce reduce and thicken for about 15-20 minutes.
  6. Serve hot with a side of rice and vegetables.
