Ingredients:
- 2 pounds bone-in, skin-on chicken thighs
- 1/2 cup silver onion (sibuyas na sibuyas)
- 8 cloves garlic, crushed
- 1/2 cup soy sauce
- 1/2 cup vinegar
- 1 teaspoon whole black peppercorns
- 3 bay leaves
- 1 teaspoon brown sugar substitute (optional)
- salt, to taste
Instructions:
- Season chicken with salt.
- Place onion, garlic, soy sauce, vinegar, peppercorns, bay leaves, brown sugar substitute (if using), and chicken in the Instant Pot.
- Cover and cook on high pressure for 25 minutes.
- Let the pressure release naturally for 10 minutes before releasing the remaining pressure manually.
- Discard bay leaves and remove chicken from Instant Pot.
- Switch the Instant Pot to sauté mode and reduce the sauce to desired thickness.
- Return the chicken to the pot and coat with the sauce.
