Joy’s Easy Banana Bread Recipe
This first recipe is called Joy’s Easy Banana Bread Recipe and it certainly lives up to its name. With only a few simple ingredients, this recipe is perfect for those of us who are short on time but still want a delicious homemade treat.
Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter
- 3/4 cup brown sugar
- 2 eggs, beaten
- 2 1/3 cups mashed overripe bananas
Instructions:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×5 inch loaf pan.
- In a large mixing bowl, combine flour, baking soda, and salt.
- In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended.
- Add banana mixture to flour mixture and stir just until moistened. Pour batter into prepared loaf pan.
- Bake for 60 to 65 minutes or until toothpick inserted into center of the loaf comes out clean.
- Let bread cool in pan for 10 minutes, then remove to a wire rack to cool completely.
Joy of Cooking Quick Breads Recipe
Next up is a recipe from the classic cookbook, Joy of Cooking. Their Quick Breads recipe is a great base for any type of bread you may want to make, but I especially love using it for banana bread.
Ingredients:

- 1/2 teaspoon salt
- 3 teaspoons baking powder
- 1 egg
- 1 cup milk
- 1/4 cup vegetable oil
Instructions:
- Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9×5 inch loaf pan.
- In a large mixing bowl, combine flour, sugar, salt, and baking powder.
- In a separate bowl, beat the egg and mix in milk and vegetable oil.
- Add egg mixture to flour mixture and stir just until moistened. Fold in mashed bananas.
- Pour batter into prepared loaf pan.
- Bake for 50 to 60 minutes or until toothpick inserted into center of the loaf comes out clean.
- Let bread cool in pan for 10 minutes, then remove to a wire rack to cool completely.
