It’s healthy!
Healthy Baked Oatmeal Recipe
Ingredients:
- 2 cups rolled oats
- 1/3 cup honey
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 2 cups unsweetened almond milk
- 1 egg
- 2 tsp vanilla extract
- 1/2 cup blueberries
- 1/2 cup chopped nuts (optional)
Instructions:
- Preheat your oven to 375°F (190°C) and lightly grease an 8-inch baking dish.
- In a large bowl, mix together the oats, baking powder, cinnamon, and salt.
- In a separate bowl, whisk together the honey, almond milk, egg, and vanilla extract.
- Spread the blueberries evenly on the bottom of the baking dish and sprinkle the chopped nuts on top (if using).
- Evenly pour the oat mixture over the berries and nuts.
- Pour the wet ingredients over the oats and bake for 35-40 minutes or until the top is golden brown and the oats are set.

Another variation of this recipe that I love is adding in some extra blueberries on top. This gives the dish a little extra burst of flavor and makes it even more filling. Here’s how to make it:

Lastly, I wanted to share another variation of this recipe that I found over at Our Table. This one is a little different because instead of baking it in one big dish, it’s baked in individual jars. It’s a great option for when you’re on-the-go and it’s so cute too!
Ingredients:
- 1 cup rolled oats
- 1/2 cup unsweetened almond milk
- 1/2 cup plain Greek yogurt
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
- 1 egg white
- 1/2 cup blueberries
- 1/4 cup chopped nuts (optional)
Instructions:
- Preheat your oven to 350°F (175°C). Lightly grease 4 small jars.
- In a bowl, mix together the oats, almond milk, Greek yogurt, baking powder, vanilla extract, and egg white.
- Divide the mixture evenly between the 4 jars, filling them about 3/4 of the way full.
- Top with blueberries and chopped nuts (if using) and bake for 25-30 minutes or until the top is golden brown and the oats are set.
