What’s up foodies! Today, I’ve got a bomb Mexican Adobo Chicken with Potatoes recipe for you. Don’t be scared of the fancy name, it’s actually super easy to make. And let me tell you, this dish is packed with flavor and spice, just like my ex-girlfriend. Let’s get started!

Ingredients:

  • 1 tablespoon of vegetable oil
  • 8 chicken thighs, bone-in and skin-on
  • 1 onion, sliced
  • 4 garlic cloves, minced
  • 1 tablespoon of dried oregano
  • 1 tablespoon of ground cumin
  • 1 tablespoon of smoked paprika
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 3/4 cup of chicken broth
  • 1/4 cup of apple cider vinegar
  • 2 bay leaves
  • 2 potatoes, cubed
  • Chopped cilantro, to garnish

Instructions:

  1. Heat the oil in a large skillet over medium-high heat. Add the chicken and cook until browned on both sides, about 6 minutes per side. Remove the chicken from the skillet and set aside.
  2. Add the onion to the skillet and cook until softened and lightly browned, about 5 minutes. Add the garlic, oregano, cumin, paprika, salt, and black pepper, and cook for 1 minute, until fragrant.
  3. Add the chicken broth, apple cider vinegar, and bay leaves, stirring to combine. Nestle the chicken back into the skillet and add the potatoes. Cover and cook for 25-30 minutes, or until the chicken is cooked through and the potatoes are tender.
  4. Garnish with cilantro and serve hot. Enjoy!
