  • 3 bay leaves
  • 1/2 cup of water
  • 2 tbsp of cooking oil

Instructions:

  1. In a large bowl, combine the chicken thighs, soy sauce, white vinegar, garlic, peppercorns, and bay leaves. Mix well.
  2. Cover the bowl with plastic wrap and marinate the chicken in the refrigerator for at least 30 minutes, or up to overnight.
  3. In a large pan, heat the cooking oil over medium-high heat.
  4. Add the chicken to the pan, skin-side down, and cook for 5-6 minutes on each side or until browned.
  5. Add the leftover marinade and 1/2 cup of water to the pan.
  6. Bring the mixture to a boil, then reduce the heat to low and cover the pan.
  7. Simmer for 30-40 minutes, or until the chicken is cooked through and tender.
  8. Remove the chicken from the pan and transfer to a serving dish.
  9. Increase the heat to high and boil the remaining sauce until it thickens.
  10. Pour the sauce over the chicken and serve hot with rice. Enjoy!
