Ingredients:
- 1 9-inch pie crust
- 6 cups thinly sliced apples (Granny Smith work well)
- 3/4 cup granulated sugar

- 1/4 teaspoon salt
- 2 tablespoons unsalted butter
- 1 egg white, beaten
Instructions:
- Preheat oven to 400°F (205°C).
- Roll out pie crust to fit a 9-inch pie dish. Place crust in dish and trim edges.
- Toss apples with sugar, lemon juice, cinnamon, nutmeg, and salt in a large bowl.

- Place second pie crust on top and trim edges. Cut a few slits in the top to allow steam to escape.
- Brush top crust with beaten egg white.

Ingredients:
- 1 9-inch pie crust
- 6-8 cups thinly sliced apples (Granny Smith or Honeycrisp work well)
- 1 tablespoon lemon juice
- 1/2 cup unsalted butter
- 3 tablespoons all-purpose flour
- 1/2 cup water
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
Instructions:
- Preheat oven to 375°F (190°C).
- Roll out pie crust to fit a 9-inch pie dish. Place crust in dish and trim edges.
- Toss apples with lemon juice and pour into crust.
- Melt butter in a saucepan over medium heat. Stir in flour to form a paste.
- Add water, granulated sugar, brown sugar, cinnamon, nutmeg, and allspice, and bring to a boil. Reduce heat and simmer for 5 minutes, stirring constantly.
- Pour mixture over apples in crust.
- Place second pie crust on top and trim edges. Cut a few slits in the top to allow steam to escape.
